Purpose
The wide stiff blade is strong and rigid.  A stiff blade is most often used for raw beef and pork.  A boning knife is used to separate meat from the bone, trim fat and remove silverskin.  22mm is CCI's widest boning knife and reflects the professional butcher's need for a variety of blade widths when deboning beef or pork.
