I have now both the 12" and the 14" slicer. I have cut meat all my life, from the age of 15 to my now 66 years and I must say that these knives are the best of the best. Amazing edge retention and SO manageable in whatever task. I am a professional meat cutter, have used all the top names in meat cutting knives, and I highly recommend these knives--above all others. They are simply amazing. The best of the best.
